300g flour (I use wholemeal spelt)
100g jumbo oats1 teasp each bicarb/baking powder
100g raisins
100g sunflower and pumpkin seeds
2 tbsp fennel
Mix all the dry ingredients in a bowl then add:
1 tbsp agave syrup
2 tbsp molasses
125ml oil (I use olive)
350-475ml water
teasp cider vinegar
Stir until "just mixed" and spoon into non-stick or lightly oiled muffin tins and bake 180 degrees c gas 4 for 35-45 mins.
Fennel can be omitted and raisins replaced with goji berries. I'm trying to work in coconut somewhere at the moment too...
